Balsamic Steak with Baked Potato


Ingredients
  • 120g lean fillet steak
  • 1/3 cup balsamic vinegar
  • 2 tablespoons shredded basil
  • 1 teaspoon cracked black pepper
  • 1 teaspoon grated lemon rind
  • 1 clove of garlic, crushed
  • 1 small desiree potato with skin on
  • salt
Method

Turn oven on to 150°C.

With a fork prick potato all over.

Rub a liberal amount of salt over potato and bake in the oven for 30 mins or until soft.

Combine all ingredients except meat, then place steak in the marinade and leave for at least 30 mins.

Cook on BBQ, grill plate or in non stick pan searing on both sides.

Serve with baked potato sprinkled with chopped chives.
