Lemongrass Beef Salad

Ingredients
  • 120g Beef Fillet
  • Mixture Asian lettuce leaves, coriander leaves and mint leaves.
  • 1 stalk of lemongrass, trimmed and roughly chopped
  • 2 cloves of garlic, peeled and chopped
  • 1 fresh hot red chilli, chopped
  • ¼ teaspoon freshly ground black pepper

Dressing for noodles:

  • 1 tablespoon soy sauce
  • ½ tablespoon rice wine vinegar
  • 1 teaspoon sesame seed oil
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon grated fresh garlic
  • 1 red chilli chopped finely
  • Mix all together 
Method 

In a mortar and pestle or blender  grind the lemongrass, garlic, chilli, pepper and oil together to make a paste.

Rub some of the paste over the beef and marinate for 10 mins.

Sear beef over a high heat, browning on both sides. Cook to Med – Rare.

Add the juice of 1 lime and a teaspoon of fish sauce to the lemongrass paste to make a dressing.

Slice beef and mix through salad leaves. Dress with lemongrass dressing.

Serve with ½ cup cooked cold noodles tossed with soy dressing.
