Asian Chicken  in Broth

Asian Chicken in broth


Ingredients
  • 40g Rice noodles
  • 120g Chicken Tenderloins
  • 2 cups chicken stock
  • 2 cups water
  • 5cm piece lemongrass, finely chopped
  • 1 cm piece of Ginger finely chopped
  • 1 Small red chilli, finely chopped
  • 1 Tablespoon Soy Sauce
Method 

Combine all ingredients in a large saucepan. Bring to the boil then simmer for 5 min.

Add chicken tenderloins and simmer for 10mins.

Add juice of ½ a lime

½ Tablespoon fish sauce

2 Bok Choy cut into 1/4 

1 Spring onion, finely sliced

Pour Boiling water over rice noodles and allow to soften for 5 mins, drain.

Place into bowl and pour over Asian Broth.
