Lemony Chicken with Couscous

Lemony chicken with couscous


Ingredients
  • 1 Small Chicken stock cube, crumbled
  • 1 cup of water
  • 1 clove garlic, crushed
  • 120g chicken tenderloins (approx 4)
  • 1 ½ Tablespoons lemon juice
  • ½ a small onion finely chopped
  • ½ Teaspoon preserved lemon finely chopped
  • ½ cup Couscous
  • ½ cup chicken stock
Method

Combine stock cube, water and garlic in a non stick pan. Bring to the boil.

Add Chicken, reduce heat and simmer until just cooked.

Remove chicken from pan, increase heat and boil mixture until reduced by half.

Bring chicken stock to the boil and stir in couscous and preserve lemon, remove from heat and cover for 5 mins.

Serve chicken on top of couscous and pour over lemony sauce.
