Chicken with Mango Salsa

Chicken and Mango Salsa

Ingredients
  • 20g Chicken Breast, skin off
  • ½ Mango( from your fruit portion), peeled and cut into cubes
  • ¼ red onion, diced
  • ¼ Lebanese Cucumber, diced
  • ½ Red chilli, deseeded, diced
  • ½ teaspoon finely grated ginger
  • 1 Tablespoon chopped coriander
  • Juice of half a lime
  • ½ cup chicken stock
  • ½ cup couscous
Method

Grill Chicken Breast on BBQ or in non stick pan.

Combine Mango, red onion, cucumber, chilli, ginger, coriander and lime juice to make Salsa.

Bring chicken stock to the boil in a small saucepan and add couscous.

Stir and rest for 5 mins.

Place couscous on plate, top with Grilled chicken with Salsa on the side.
