Lamb


Curried Lamb Cutlets

Ingredients
  • 2-3 lean Lamb Cutlets
  • 2 Teaspoon curry powder
  • 1 Teaspoon ground coriander
  • 1 clove of garlic crushed
  • 2 Tomatoes
  • 2 cm fresh garlic peeled and grated
  • 2 Tablespoons fat free yoghurt
  • 1 small potato thinly slcied
Method

Mix curry powder coriander, garlic, ginger and yoghurt together and brush over cutlets. Allow to marinate for 3 hours.

Place sliced potato on a bake tray lined with baking paper, sprinkle with salt and pepper and place into hot oven.

In a non stick pan spray a little oil and gently sauté ½ chopped onion.

Add cutlets along with 2 chopped fresh tomatoes and a little water.

Cook lamb for approx 10 mins turning once.
