Ingredients
  • 1 large onion, peeled and roughly chopped
  • 2 cloves of garlic peeled and chopped
  • 4 carrot chopped
  • 2 cups broad beans peeled (optional)
  • 2 zucchinis chopped
  • 1 large can of whole tomatoes
  • 2 tablespoons of tomato paste
  • 2 litres of vegetable stock fresh basil
Method

In a large saucepan place ¼ cup water and heat. Add onion and garlic and cook until softened. Add carrots and zucchini, cook, stirring for 2 minutes. Add tomatoes, beans tomato paste and stock. Bring to the boil and reduce to a simmer for 20 minutes. Season with salt and pepper. Top with fresh torn basil leaves.
