Mixed Mushrooms


Ingredients 

2 cups mixed mushrooms, cut into large pieces
1/4 cup red wine vinegar
1 clove garlic, crushed
1/2 cup chives, coarsely chopped
1 red onion, finely sliced
1 cup parsley, chopped



 Method

Spread mushrooms in a single layer on a baking tray. Cook in a slow oven for 40 minutes. Heat vinegar, garlic and chives in a small saucepan for 1 minute. Place mushrooms in a bowl, pour over the vinegar mixture. Add onion and parsley, serve warm or cold.
