Asian Noodle Soup with Pork


Ingredients

 

  • 120g Pork Fillet, sliced
  • 40g dried rice stick noodles
  • 1 Cup Chicken Stock
  • 1 Long red chilli chopped
  • 1 Clove of Garlic cut in half
  • 2 Slices of fresh Ginger   
  • Juice of ½ a lime
  • 1 Teaspoon fish sauce
  • Bok Choy cut into quarters
  • Bean sprouts, to serve
  • Coriander, to serve
Method

Place noodles in a bowl and pour boiling water over and cover for 10 mins until soft and separated.

Place the stock, chillies, ginger, garlic, lime juice and fish sauce in a saucepan and bring to the boil and simmer for 5 mins.

Add the Pork and simmer for 3 mins. Add Bok Choy and noodles and cook for 1 min.

To serve place in a large bowl and top with bean sprouts and coriander.
