Fish with Mexican Vegetables

fish with mexican vegetables

Ingredients
  • 150g firm white fish
  • 2 teaspoons lime juice
  • ½ red onion, finely sliced
  • 1 clove garlic, crushed
  • ½ red capsicum, cut into strips.
  • 100g tinned tomatoes
  • ½ corn kernels, cut from the cob
  • 1 zucchini, thinly sliced
  • Fresh coriander
Method 

 Sprinkle lime juice over fish.

Heat non stick pan and cook onion and garlic until soft. Add capsicum, zucchini, tomatoes, corn and salt and pepper to taste.

Sprinkle a ¼ of a teaspoon of chilli powder over vegetables and cook for 1min. Pour over fish and bake in the oven at 180°C for 10 mins.
