Fish with Roasted Vegetables

Ingredients
  • 100g cherry tomatoes
  • 1 small carrot, cut into half
  • 1 small zucchini, cut into half
  • 150g firm white fish
Method

Heat oven to 180°C. Spray vegetable with a little oil and season with salt and pepper.

Place all vegetable in a baking tray lined with baking paper. Roast in oven for 20 mins.

In a separate pan, lined with baking paper, place fish and season with salt and pepper. Bake for 20 mins.

Serve fish on top of roasted vegetable and pour over any juices from the roast.
