Greek Style Fish Fillet with Sliced Potato

Greek style fish

Ingredients
  • 150g firm white fish fillet
  • 1 Onion finely chopped
  • 1 Tablespoon finely chopped parsley
  • 2 Ripe tomatoes, sliced
  • Cracked pepper and salt
  • 1 small Desiree Potato with skin on

Method
In a non stick pan gently sauté onion until soft.

Add chopped parsley and cook for another min.

Add sliced tomatoes and continue to cook for 6 mins. Season with cracked pepper and salt.

Place Fish filet in a baking tray lined with baking paper and spoon over tomato mixture and bake at 200°C for 10 mins .

Steam sliced potato, sprinkle lemon pepper seasoning over the slices and serve with fish.
