BBQ Green Curry Prawns with Special Fried Rice

Green curry prawns

Ingredients
  • 120g peeled green prawns
  • 1 bunch coriander leaves picked
  • 2 cloves garlic, crushed
  • 1 teaspoon chicken stock powder
  • ½ teaspoon curry powder
  • Splash of water.
  • ½ cup day old cooked basmati rice
  • 1 stick of celery, finely chopped
  • ½ onion, finely chopped
  • ¼ red pepper, cut into dice
Method

In a mortar and pestle grind together the coriander, crushed garlic, chicken stock powder, curry powder and water.

Rub paste over the prawns.

In a non stick pan add onion over a medium heat until onion is soft, add celery and red pepper and continue to cook for 3 mins.

Add rice and stir through. Splash over a little soy sauce to season.

BBQ prawns on BBQ grill plate and serve with rice.
